All food handlers have a legal responsibility to ensure that the food they serve is safe for the consumer to eat. People with food allergies or intolerances have to avoid certain foods to prevent reactions, some of which can prove life-threatening.

This course will provide learners with an understanding of why food allergens need to be controlled and strategies for control, such as keeping and making available information about allergen ingredients, reducing cross contamination, improving communication and providing advice to consumers.
